Keep things easy, fresh, and satisfying in this laid back summer cooking class with Chef Mona. Designed for warm evenings when you want big flavor with minimal carbs, this class focuses on bold combinations that feel exciting yet totally doable at home. You’ll prepare two meal worthy, salad style dishes rooted in Asian flavors. First up: Grilled Beef and Ripe Summer Peaches, tossed with fresh herbs, arugula, and a bright, savory dressing for a sweet smoky hit. Then you’ll build a Savory Ramen Chop Salad—a hearty, vegetable forward bowl packed with crunch and bold flavor, but with almost none of the carbs you’d expect from ramen. Topped with soy poached chicken or tofu, it’s a satisfying, stand alone meal for lunch or dinner all week.
Chef Mona will guide you through grilling techniques, smart flavor layering, and flexible substitutions so you can easily adapt these dishes to chicken, shrimp, pork, or plant forward options at home.

Level up your cookout game with Chef Mona in this flavor-packed class focused on versatile, make ahead sauces you’ll use all summer long. We’ll sample the sauces with chicken wings and seasonal veggies (vegetarians welcome!), then talk through how to riff on them for grilled meats, seafood, bowls, sandwiches, and more. You’ll also learn multiple “second life” uses—like turning a sauce into a crave-able summertime dip for chips, crudité, or grilled bread. Best of all, you’ll take home your creations to show off at your next barbecue.

Chef Mona is your expert and guide as you craft Savory Umami Oats and Caribbean Jerk Fonio & Roasted Veggie Bowls.
First, flip the script on a breakfast staple by simmering rolled oats in a rich vegetable stock infused with smoked paprika, lemon, and herbs. Finish the dish with a chiffonade of fresh greens and a variety of fun flourishes. The result is a savory, high-fiber alternative to traditional grits or risotto.
The second item on the menu is Caribbean Jerk Fonio & Roasted Veggie Bowls, a nutrient-dense powerhouse that brings the heat and heartiness of the islands to your kitchen. You’ll discover Fonio—the ancient, gluten-free “super grain” of West Africa. Topped with roasted sweet potatoes, black beans, and a fiery, house-made Scotch Bonnet jerk sauce you’ll be craving this all summer long.

Juneteenth: Celebrating the Taste of Freedom
Cooking Class for Ages 16+
Wednesday, June 17th | 5:30-8:00pm

This class with Chef Mona explores the cultural significance of Juneteenth through traditional African American foods associated with the holiday. The menu highlights the symbolic use of red foods, reflecting their historical importance in African cultures and their continued presence in Juneteenth celebrations.
Students will prepare and enjoy a refreshing sorrel beverage (often called “Red Drink”), a watermelon radish salad with honey chili lime dressing, and smoky, spice driven jollof (“red”) rice made with smoked sausages, with a vegetarian option available upon request. The class concludes with red velvet cupcakes, a dessert rooted in tradition and originally colored with beets.
Throughout the class, Chef Mona will share the historical context of these dishes and their enduring cultural relevance, offering insight into how food connects tradition, memory, and celebration.
